Thanksgiving is next week, and I want to share how to make your meal delicious and healthy!
The video below not only shows you a great “middle of the plate” entree (Stuffed Acorn Squash), but also reminds you to not make Thanksgiving all about the “food” – but about giving thanks for our life, our friends and our family.
So, for the meal, you can serve lots of vegetables (steamed or roasted), brussell sprouts, green beans with almonds, mashed potatoes without butter or milk (use soy milk, veg broth or water), mashed sweet potatoes, and the stuffed acorn squash from the video. Make stuffing in a pan, and just don’t “stuff” it 😉
Then, for dessert, eat healthy versions of Pumpkin Pie and/or fresh Apple Pie!
I promise, you will feel GOOD after eating these foods, not passed out on the couch like most people!

Pumpkin Pie or Custard
1 1/2 cups soy mill
4 T corn starch
1 1/2 cups cooked pumpkin
1/2 sugar (or sucanat)
1 t cinnamon
1/2 t ground ginger
1/2 t salt
1/8 t ground cloves
1 – 9 inch pie unbaked crust
1.Preheat oven to 375 degrees
2. Combine soymilk and corn starch in large bowl, and whisk until smooth.
Add in the pumpkin, sugar, cinnamon, ginger, salt, and cloves. Pour into
pie crust or a custard dish and bake for 45 minutes until firm. Cool before slicing
If you really want to splurge, get some soy vanilla “ice cream” (it’s dairy-free).
It’s definitely NOT sugar free, but is dairy free.
